This site offers some really great views. You can take the 101 south all the way to Solana Beach I believe. Carlsbad (and neighboring city Encinitas) are nice because to a point they are still underdeveloped for beach towns. Carlsbad Village Dr. (aka Downtown Carlsbad) is 5 mins. away.
